This versatile granola is perfect as a healthy bite, or for breakfast and even dessert. Pair it with Greek yogurt, sprinkle it on your morning porridge, or enjoy with frozen berries. In this recipe, we’ve incorporated buckwheat and flaxseed to enhance both flavor and omega-3. Experience the luxury of antioxidants from dried blueberries and nutritious goji berries.

Ingredients:

  • 5 cups of rolled oats and buckwheat groats (choose the proportion to your preference, use certified gluten free for gluten-free granola)
  • 1.5 cups of pumpkin seeds and sunflower seeds, mix as you wish.
  • 0.5 cup of flaxseeds or chia seeds (optional)
  • 1 cup of raw cashew nuts (any nuts are possible)
  • ½ cup melted coconut oil
  • ½ tsp of salt
  • ½ tsp cardamom
  • 1 tbsp Ceylon cinnamon
  • 1 tbsp cacao
  • Dried fruit optional (Give goji berries and blueberries a try)

Instructions

1. Preheat the oven to 270 degrees Fahrenheit and line a large baking sheet with parchment paper.

2. In a large bowl, combine the oats, seeds, nuts, salt, cardamon, cacao and cinnamon. Stir to blend.

3. Add the coconut oil. Mix well, all oats, nuts and seeds should be coated.

4. Pour the mixture onto your baking sheet and use a large spoon to spread it evenly.

5. Bake for about 1 hour or until light golden, stirring halfway through and pressing the extra-clumpy granola.

6. Allow the granola to cool.

7. After cooling, add dry fruits for a sweeter taste.

8. Store in airtight container at room temperature for up to 2 weeks or in a freezer bag for up to 3 months.
